I wonder if the canned filling wont be as thick as the curd (which is egg based) and might absorb into the muffin rather than staying intact as a filling. Cook for 2-3 minutes until the sugar is completely dissolved, stirring constantly. This is problematic, as it traps steam. I dont think Id chance it by freezing the batter.
